Pumpkin Cheesecake Bars

Pumpkin Cheesecake Bars…another recipe from Brandi….don’t you just love her?

 I want her to live with me.

 Cook for me.

 I’m jealous of her hubby.


She sent me this picture from her phone AFTER her family ate some for desert, hee hee…..so this recipe will produce more than this picture!


1c. Flour
1/3 c. packed brown sugar
1/2c chopped pecans
8oz cream cheese (block), softened
3/4c. Sugar
3/4c. Canned Pumpkin
2 eggs
1tsp Vanilla
1 1/2tsp cinnamon
1/2tsp nutmeg

5 tbs. cold butter


Combine flour, brown sugar. Cut in butter until mixture is crumbly and add pecans. Set aside 1/2c of the crumble. Press remaining mixture into greased 8″ square baking dish and bake @ 350 for 15-20 minutes. Cool completely.

Once crust is cooled beat cream cheese and sugar. Add pumpkin, eggs, vanilla, cinnamon and nutmeg and mix. Pour over crust and top with the crumble. Bake at 350 degrees for 30-35 minutes or until golden brown. Cool at room temperature and then put it in the fridge to chill.

Before serving slice into rectangular bars. Serve with whipped cream!

    You girls flatter me!!! I generally do not have luck with baking, but this was easy and dee-lish so it’s a keeper!
    Karly, next you need to post that pound cake. You know, the super healthy, low-fat one that we eat while sitting on your kitchen counter. 😉

    I had to come home and make these immediately. I used a homemade graham cracker crust instead and they turned out so yummy!

    Cake bars are easier to make than cookies or circled cakes since you just need to shape the dough in a bar then simple slice it. Cookies need to shape circled well to make it perfect. Thanks for the easy and awesome recipe.

  6. Yum! Cheese and pumpkin is such a great combination add chocolate to make it greater! LOL. chocolate syrups will do make it yummier.
